The Meat Safety Certificate
is a longer course on the theory and practice of meat hygiene and
handling. For meat production staff in all areas of the meat and
poultry industry to enable them to safely produce meat and meat
products to the highest possible standards.
The course covers food
hygiene principles and practice, slaughter and dressing, butchery,
processing and packing.
The course runs over three
days (9.30-3.30) or theory and six evenings or practical.

their farms and to raise the levels of health and safety awareness in the industry. It is aimed at all farmers (regardless of whether you employ anyone) and farm managers who are responsible for health and safety.
